Lentil Loaf

Simple ingredients, simple to make, delicious to eat.

Ingredients

  • 2 cups cooked lentils (or 1 pkg Trader Joe's cooked lentils)
  • 1/2 cup chopped onions
  • 1 1/2 T flour
  • 1/2 cup whole-grain bread crumbs
  • 1/2 cup oil
  • 1/2 cup tomato sauce
  • 1/2 cup chopped walnuts
  • 1 t salt or to taste
  • Bay leaf

Instructions:

Combine lentils, onions, walnuts, bread crumbs, tomato sauce, flour. Put into greased baking dish. Put bay leaf at intervals on top of loaf. Bake at 375 for 40 minutes. Add more sauce before serving. Serves 6-10. Recipe may be doubled and tripled as needed
